Ingredients:
1 bunch Methi leaves (Chopped)
2 medium sized Potatoes (Aloo) (Chunks)
1 slice of fresh Ginger
1 tbsp of Vegetable Oil
1 dried Red Chilli
1 tbsp Methi seeds
Salt to taste
Preparation:
1. In a deep pan, saute red chilli and ginger in vegetable oil for a couple of minutes.
2. Add the potato chunks and saute.
3. Add the methi saag and saute for 5 minutes.
4. Cover pan and simmer till saag is soft.
5. Serve hot.

Makki Ki Roti
Ingredients:
3 cups Corn flour
1/2 cup Wheat flour
1/2 tbsp Salt
Butter or Ghee
Hot Water
Preparation:
1. Prepare the dough by mixing the corn flour, wheat flour, salt and water such that the flour binds well together and can be rolled into rotis.
2. Create 12 balls of dough and roll each into a round flattened roti.
3. On a pre-heated skillet, cook each roti. Turn both sides over and apply some ghee as each roti turns golden brown.
4. Serve with Sarso Ka Saag.

A Green Salad with Jaggery-Mustard Vinaigrette Dressing
Salad:
1 head of Green Lettuce (chopped)
A handful of Golden Walnut pieces
Dressing Ingredients:
1 tbsp Brown Mustard
2 tbsp White Vinegar
6 tbsp Extra Virgin Olive Oil
1 clove Garlic (finely chopped)
2 tbsp Palm Sugar or Jaggery
Pinch of Parsley (dried or fresh)
Pinch of Oregano (dried)
Salt to taste
Freshly Ground Pepper to taste
Preparation:
1. Add all ingredients for dressing in a bowl and wisk. This is easy!
2. Serve salad greens with fresh dressing.
3. Garnish with some walnut pieces.

1 bunch of Mustard Greens (Sarso) (Chopped)
1/2 bunch Spinach (Palak) (Chopped)
1 medium Red Onion (Chopped)
4 cloves Garlic (Thinly sliced)
1 slice Ginger (Chopped)
1 medium Tomato (Chopped)
2 Green Chillies (Garnish)
1/2 cup Milk
1 tbsp Ghee
Spices:
1/2 tbsp Turmeric powder (Haldi)
1/2 tbsp Red Chilli powder (Mirchi)
1/2 tbsp Garam Masala powder
Salt to taste
Preparation:
1. In a deep pan, saute ginger, garlic, onion, tomatoes in ghee till onions are golden brown.
2. Add garam masala, haldi, mirchi, salt and saute till fragrant.
3. Add mustard greens to pan and saute for 5 minutes.
4. Add spinach to pan and saute for 5 minutes.
5. Cover pan and simmer for 10 minutes or till greens are soft.
6. Add milk to pan and stir. Simmer for 10 minutes or till liquid is absorbed.
7. Garnish with green chillies before serving.

My Matar Paneer
Ingredients:
1 tbsp Ghee
1 lb Paneer
1 cup Peas (Frozen or Fresh/Shelled)
1/2 medium sized Red Onion (chopped)
1 slice of Ginger (fresh, chopped)
2 cloves of Garlic (fresh, chopped)
Masala mix:
1/4 cup of Cashews (pieces)
1/2 cup of Cream
1/2 cup of Tomato paste
1/2 tsp of Haldi
1 tsp of Garam Masala (freshly ground)
1/4 tsp of Dhania (freshly ground)
1 tsp of Shahi Paneer masala
1/4 tsp of Mirchi (freshly ground or powder)
1 tsp of sugar (or to taste)
1 tsp of salt (or to taste)
Optional:
Fresh Coriander leaves (for garnish)
Fresh Green Chili (Slivers for garnish)
Preparation:
1. Blend the masala mix ingredients together in a blender.
2. Cut paneer in cubes, saute until golden in a nonstick frying pan with dab of ghee on the pan's surface.
3. In a pan (nonstick preferred), heat 1 tbsp of ghee, add red onion, ginger, garlic and saute until golden.
4. Then add masala mix to pan. Stir and cook for 5-7 minutes on low-medium heat.
5. Add peas to the pan. Continue cooking for 5 minutes at low-medium heat.
6. Add paneer cubes to the pan. Continue cooking for 5 minutes at low-medium heat.
7. Garnish with fresh coriander leaves and green chillies and its ready to serve.

4 cloves of garlic
1 lime (juiced)
1/2 tbsp chilli powder
1/2 tbsp garam masala
1/2 tbsp dhania powder
salt to taste
4 tbsp of olive oil
1/4 cup of water
Sprigs of coriander leaves
2 green chillies thinly sliced
Preparation:
1. Roast 1/4 cup of sesame seeds until they start popping.
2. Grind sesame seeds in a blender.
3. Add chopped garlic, chickpeas to blender.
4. Add spices - chilli powder, garam masala, dhania powder, salt to blender and mix.
5. Add lime juice to mix.
6. Add olive oil to smoothen hummus mix.
7. Use 1/4 cup of water to blend hummus into smooth paste.
8. Garnish with coriander leaves and green chillies.
