My Matar Paneer

Ingredients:
1 tbsp Ghee
1 lb Paneer
1 cup Peas (Frozen or Fresh/Shelled)
1/2 medium sized Red Onion (chopped)
1 slice of Ginger (fresh, chopped)
2 cloves of Garlic (fresh, chopped)

Masala mix:
1/4 cup of Cashews (pieces)
1/2 cup of Cream
1/2 cup of Tomato paste
1/2 tsp of Haldi
1 tsp of Garam Masala (freshly ground)
1/4 tsp of Dhania (freshly ground)
1 tsp of Shahi Paneer masala
1/4 tsp of Mirchi (freshly ground or powder)
1 tsp of sugar (or to taste)
1 tsp of salt (or to taste)

Optional:
Fresh Coriander leaves (for garnish)
Fresh Green Chili (Slivers for garnish)

Preparation:
1. Blend the masala mix ingredients together in a blender.
2. Cut paneer in cubes, saute until golden in a nonstick frying pan with dab of ghee on the pan's surface.
3. In a pan (nonstick preferred), heat 1 tbsp of ghee, add red onion, ginger, garlic and saute until golden.
4. Then add masala mix to pan. Stir and cook for 5-7 minutes on low-medium heat.
5. Add peas to the pan. Continue cooking for 5 minutes at low-medium heat.
6. Add paneer cubes to the pan. Continue cooking for 5 minutes at low-medium heat.
7. Garnish with fresh coriander leaves and green chillies and its ready to serve.

Spicy Indian Hummus

Ingredients:
3 cups of chickpeas (soaked and boiled)
1/4 cup of roasted sesame seeds
4 cloves of garlic
1 lime (juiced)
1/2 tbsp chilli powder
1/2 tbsp garam masala
1/2 tbsp dhania powder
salt to taste
4 tbsp of olive oil
1/4 cup of water
Sprigs of coriander leaves
2 green chillies thinly sliced

Preparation:
1. Roast 1/4 cup of sesame seeds until they start popping.
2. Grind sesame seeds in a blender.
3. Add chopped garlic, chickpeas to blender.
4. Add spices - chilli powder, garam masala, dhania powder, salt to blender and mix.
5. Add lime juice to mix.
6. Add olive oil to smoothen hummus mix.
7. Use 1/4 cup of water to blend hummus into smooth paste.
8. Garnish with coriander leaves and green chillies.
